Ingredients
- 4 ounces semi-sweet chocolate chips
- 1/2 cup sugar
- 6 tablespoons unsalted butter
- 1 egg
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 teaspoons vanilla extract
- 4 ounces crushed peppermint candy
Method of Preparation
- Preheat oven to 325 degrees. Line your baking sheet with parchment paper or a non-stick mat.
- Melt chocolate chips in a double boiler or in the microwave (in 15 second increments, being careful not to burn the chocolate).
- Beat sugar and butter together well, add egg and vanilla extract, and once incorporated, add the melted chocolate.
- Mix in the flour, baking powder and salt until well combined. Stir in the crushed peppermint candy (you can set some aside for garnish on top if you’d like).
- Drop batter by the tablespoon onto the baking sheet and top with reserved crushed peppermint candy (if you’ve chosen to set some aside).
- Bake for 9 minutes, remove from oven and let cool.
