Chocolate Peppermint Patty Cookies

Novelty Hill Stillwater Creek Vineyard Merlot

The rich cocoa and cooling peppermint of these cookies meet their perfect match in a Novelty Hill Merlot. The wine’s soft, plush tannins and bright red fruit notes complement the chocolate, while hints of spice echo the peppermint’s cooling warmth. Together, they create a balanced, indulgent finish—festive enough for the holidays, yet smooth enough to sip between bites.

Ingredients

  • 4 ounces semi-sweet chocolate chips
  • 1/2 cup sugar
  • 6 tablespoons unsalted butter
  • 1 egg
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 4 ounces crushed peppermint candy

Method of Preparation

  1. Preheat oven to 325 degrees. Line your baking sheet with parchment paper or a non-stick mat.
  2. Melt chocolate chips in a double boiler or in the microwave (in 15 second increments, being careful not to burn the chocolate).
  3. Beat sugar and butter together well, add egg and vanilla extract, and once incorporated, add the melted chocolate.
  4. Mix in the flour, baking powder and salt until well combined. Stir in the crushed peppermint candy (you can set some aside for garnish on top if you’d like).
  5. Drop batter by the tablespoon onto the baking sheet and top with reserved crushed peppermint candy (if you’ve chosen to set some aside).
  6. Bake for 9 minutes, remove from oven and let cool.
