Liam Spence is a talented chef with over 20 years experience working at many of Seattle’s favorite restaurants. With a love for Northwest farms, waters, and vineyards; a passion for Mediterranean flavors; and a commitment to sustainably grown ingredients, Chef Liam’s interest in wine led him to Novelty Hill-Januik in 2019.
An active member of the Seattle food scene for more than two decades, Chef Liam helped establish such local favorites as Tom Douglas’ Lola where he spent ten years working first as a sous chef and later as executive chef. Other notable positions include work as executive chef at Bis on Main in Bellevue and most recently Seattle’s Zig Zag Café.
Born in Nigeria to a Peace Corps mother and timber working father, Chef Liam grew up in the Northwest. He holds Irish citizenship and embraces cuisine from all parts of the world, though he admits to favoring Mediterranean dishes. Underpinning all his cooking is a commitment to quality, seasonal ingredients.
He is particularly proud of his recipe for grilled octopus, recently served with fava beans, porcini mushrooms and wild ramp yogurt. “The best octopus you’ve ever had. Anywhere!” he says with a smile. “I love octopus and have refined my techniques of cooking it over the years. I take particular pride in this one.”
