Novelty Hill-Januik Executive Chef Kim Sturts is a Pacific Northwest native, with over 16 years experience working at many of the Seattle area’s favorite restaurants. He brings fresh, local ingredients to life using classic French cooking methods, often melding traditional Basque flavors with East Asian influences. He is also regarded for his mastery of vegetarian cuisine.
A graduate of The Culinary Institute of America in Hyde Park, New York, Chef Kim joined the winery in 2020. It is a continuation of his work creating menus designed to enhance the enjoyment of wine, honed over three years as executive chef at Sip at the Wine Bar & Restaurant in Issaquah Highlands. Prior to joining Sip, Chef Kim served as chef de cuisine at Spaghetti Western, Mollusk and sous chef at Carmelita, The Harvest Vine, the Dahlia Lounge and Serious Pie, among other acclaimed restaurants. He credits his passion for cooking with local ingredients to his work alongside Portland chef Greg Higgins, best known as a James Beard Best Chef Northwest winner and his leadership in the sustainable food movement.
When not in the kitchen, Kim is likely to be found outdoors. He is an avid skier, mountain biker, hiker and adventurer. You will find him trail bound, exploring endless mountain peaks with Bonnie, his fearless Morkie.
